Our 100% grass-fed Katahdin lambs are born on pasture and never leave our fields until harvest day. A lamb that only consumes forage means that the fat composition is just right, not fatty like a grain-finished animal. The Katahdin sheep is a "hair sheep" that produces a milder flavor than its woolier cousin, yet the flavor is distinct and almost sweet. So, since a lambs flavor develops with age, we are able to grow the lambs to maturity, allowing adequate fat deposision, without the worry of a strong “lamby” flavor.
We follow certified organic practices which exclude any chemical medications to the lambs or treatments on the land. These lambs always get a fresh bite of grass and are never in one place for longer than 3 days. This rigorous management ensures optimum animal and land health while maintaining an even plane of nutrition that builds muscle and deposits fat for superior carcass quality.
